Ingredients:
3 Egg Yolks
1 teaspoon of Rebel Scum
1 stick of Butter (salted or unsalted)
Juice of 1/2 Lemon & a pinch of Coarse Salt
Directions:
Melt the butter in the microwave or over the stove. Aim for 135-140 degrees.
In a large bowl, add the egg yolks, hot sauce and salt. Whisk until smooth. Slowly incorporate the butter while whisking. Continue to whisk until completely emulsified.
